This superior-quality udon is made by the Sakuri family in Gifu Prefecture, Japan, an area famous for centuries for its udon. This udon is made in what is termed “the Kishimen style,” which means broader than other types of udon. The organic grains are freshly stone-ground for each batch of udon, then combined with pure water and sea salt. Traditionally air-dried for superior flavor.
